Everything bagels + crispy roasted potatoes… talk about the most delicious match made in heaven!
These everything bagel roasted potatoes are vegan, gluten free, dairy free, sugar free and only require FOUR simple ingredients! The first time I decided to combine these two flavors I absolutely fell in love and now this dish has become one of my (and my family’s) favorite healthy and easy side dishes!
This recipe makes about 6-8 servings so it’s a perfect choice to make for a big dinner, summer BBQ gathering or as a side to add to your meal prep containers for the week!
Preheat the oven to 400F/200C degrees and prepare two large, rimmed baking trays with parchment paper.
Rinse the mini golden potatoes and pat dry with a clean tea towel.
Cut each potato in half and put into a large bowl.
Add olive oil to the bowl with the potatoes and toss together until potatoes are fully coated.
Then, add the everything bagel seasoning and black pepper to the bowl and begin to turn potatoes over with a large spoon until the seasoning is evenly distributed.
Divide the potatoes evenly between the two baking trays and spread potatoes out so that there is not too much overlap.
Put the potatoes in the oven and bake for 20 minutes. If the trays don’t fit on the middle rack, you can separate them onto two separate racks.
Take the potatoes out and carefully mix & flip them with a spatula. Return them to the oven to bake for another 20 minutes or until potatoes are golden brown and crispy. (If your trays were separated on to two oven racks, swap their positions when returning to the oven for the last 20 minutes of bake time.)
