Blueberry Pancake Stack

simply delicious blueberry banana collagen pancakes!

Who doesn’t love a warm, fluffy pancake breakfast on a Sunday morning.. or any morning for that matter? I know I do! These blueberry banana collagen pancakes are quick, easy & will take care of those breakfast cravings for sure!

Unfortunately, I always found that those quick-pancake box mixes were loaded with processed ingredients and made me feel extremely sluggish after eating them! I wanted to come up with the perfect recipe that was made with wholesome ingredients, packed more protein into the meal and didn’t compromise any of that delicious pancake flavor!

Why add collagen peptides to the mix??

Collagen peptides are said to have a wide range of health benefits such as promoting healthy skin, nails and hair, helping with muscle growth and recovery, keeping bones and joints strong, promoting overall gut health and more. Plus, I just find them to be an easy addition to my baked goods, smoothies, soups and tons of other recipes!

So…viola! Here it is, my go-to blueberry banana collagen pancakes packed with fresh fruit and healthy sources of protein! Now go turn on “Banana Pancakes” by Jack Johnson and get cookin’! 

THE RECIPE

Serves 2 // Roughly 9 small pancakes

ingredients:

  • 1 large Ripe Banana, mashed
  • 1 Egg
  • 1/2 Cup Oat Milk
  • 2 Tbsp Pure Maple Syrup
  • 1 tsp Pure Vanilla Extract
  • 1 tsp Apple Cider Vinegar
  • 1 Cup Oat Flour
  • 2 Tbsp Vanilla Protein Powder of choice
  • 1 Scoop Collagen Peptides
  • 1 tsp Baking Powder
  • 1/2 tsp Ground Cinnamon
  • 1/4 tsp Salt
  • 1/4 Cup Blueberries

method:

  1. In a medium sized bowl, mash 1 large ripe banana with a fork until smooth.
  2. Add in the egg, oat milk, maple syrup, vanilla extract and apple cider vinegar to the bowl, whisk together thoroughly.
  3. Lastly, add in your oat flour, protein powder, collagen, baking powder, cinnamon and salt to the bowl. Mix well until a smooth pancake batter is formed.
  4. Fold in the 1/4 cup of blueberries to the batter. (Feel free to add more if you’d like!)
  5. Heat a non-stick pan or griddle top over medium heat.
  6. Pour heaping spoonfuls of batter onto the pan, leaving enough room in between them to be able to flip each pancake. (Cooking roughly 3 small pancakes at a time.)
  7. Once bubbles appear on the surface, flip each pancake and cook until each side is golden brown. Continue cooking steps until no more batter remains.
  8. Top pancakes with more blueberries, caramelized bananas, pure maple syrup or whatever you would like! Get creative!
