This chickpea salad sandwich is ready in just 10 minutes or less and is packed with a mix of delicious ingredients like chickpeas, avocado, dried cranberries, dill, crisp red onion, whole grain mustard and more!
I put this chickpea salad between two lightly toasted slices of my homemade sesame sourdough bread and WOW…what a combo! The best part? Sandwich toppings! Get creative with your favorites or add sliced cucumber, pickled red cabbage or beets, shredded carrots & fresh spinach like I did!
THE RECIPE
Yields 1-2 servings
prep time: 10 minutes
ingredients:
1/2 cup chickpeas, drained & rinsed
1/2 medium avocado
2 tablespoons dried cranberries
1 tablespoon red onion, diced
1/2 tablespoon whole grain mustard
1 teaspoon lemon juice
1/4 teaspoon dill
1/4 teaspoon garlic powder
Salt & pepper to taste
2 slices of sourdough bread (or bread of choice)
Optional sandwich toppings:
Sliced cucumber
Pickled red cabbage or beets
Shredded carrots
Fresh spinach
method:
In a small bowl mash the chickpeas and avocado together using a fork. (I left mine kind of chunky for texture!)
Add in dried cranberries, red onion, mustard, lemon, dill, garlic powder, salt and pepper.
Mix all ingredients together until combined.
Scoop the chickpea salad onto your bread and add desired toppings!
recipe notes:
Best served immediately! If you want to prep the sandwich ahead of time, make sure to do it no more than 1 day in advance. Any longer than that and the sandwich will become soggy!
