RAINBOW SMOOTHIE BOWL

Big colorful smoothie bowls filled with fresh fruit and beneficial superfoods will ALWAYS be my weakness!

Not only do they taste like sorbet, they can be absolutely beautiful and it’s so easy to customize your own bowl with whatever favorite toppings you may have! This rainbow smoothie bowl contains two smoothie flavors in one!

The blue smoothie side is given its spectacular color by blue spirulina, one of my favorite superfoods, that is a great source of plant-based protein, can help to boost energy, promotes healthy bacteria in the gut and is said to help to remove toxins such as traces of heavy metals from our bodies by being able to bind with them!

The pink smoothie side of this bowl, however, is also filled with some of my favorite fruits as well as pink pitaya powder! Pink pitaya, also known as dragonfruit, is high in antioxidants, vitamin C, Omega-3 & Omega-6 fatty acids and more!

recommended equipment

– A high speed blender like this one.

Pink Pitaya Powder

Blue Spirulina Powder

*You can make these bowls without these powders and just use the blend of fruits if you would like! 

THE RECIPE

Yields 1-2 SERVINGS

prep time: 15 minutes

ingredients:

For the blue smoothie side:

  • 1 large banana, frozen
  • 1 cup mango chunks, frozen
  • 1/4 cup coconut milk
  • 1 teaspoon blue spirulina powder

For the pink smoothie side:

  • 1 large banana, frozen
  • 1/2 cup mango chunks, frozen
  • 1/2 cup papaya chunks, frozen
  • 1/4 cup coconut milk
  • squeeze of lemon juice
  • 1 teaspoon pink pitaya powder

Optional toppings:

  • Banana slices
  • Kiwi
  • Mango
  • Pitaya (dragonfruit)
  • Shredded Coconut
  • Puffed Millet
  • Edible Flowers

method:

For the blue smoothie:

  1. To a high speed blender, add the frozen banana, mango and coconut milk. Blend together until fully combined.
  2. Add in the blue spirulina powder and continue blending until it is completely incorporated.
  3. Transfer into one side of your smoothie bowl and place into the freezer while you blend up the pink smoothie.

For the pink smoothie:

  1. Clean out the same blender before adding new ingredients.
  2. To the clean blender, add the frozen banana, mango, papaya, coconut milk and lemon. Blend together until fully combined.
  3. Add in the pink pitaya powder and continue blending until it is completely incorporated.
  4. Transfer into the other side of your smoothie bowl.
  5. Add desired toppings!

recipe notes:

  1. Serve immediately or pop into the freezer for up to a month!
