Coconut Mango Oatmeal

TROPICAL MANGO COCONUT OVERNIGHT OATS

Close your eyes, picture yourself on a tropical island enjoying breakfast at a little table overlooking the ocean…okay okay maybe you can’t actually be there but that’s where this recipe comes in! These mango coconut overnight oats have a naturally sweetened tropical flavor that make the perfect meal prep brekkie for summer!

This delicious mixture contains a perfect blend of some of my favorite ingredients including juicy mango, shredded coconut, coconut milk, chia seeds, pure honey, greek yogurt and oats of course!

Not only is this meal loaded with summertime flavor, but it will keep you satisfied for longer with the protein, healthy fats and fiber that it contains! Have one of these babies as a fresh weekend start to your day or take it on the run with you during the work week along with an iced coconut matcha!

THE RECIPE

Yields 2 servings 

prep time: 15 minutes

ingredients:

  • 1 1/2 Cups Coconut Milk
  • 1 Cup Quick Rolled Oats
  • 1/4 Cup Unsweetened Greek Yogurt
  • 2 Tablespoons Chia Seeds
  • 2 Tablespoons Unsweetened Shredded Coconut
  • 2 Tablespoons Pure Honey
  • 1/2 teaspoon Vanilla Extract
  • Pinch of Salt (about 1/8 teaspoon) 
  • 2 Cups Fresh Mango, cubed

method:

  1. In a medium sized bowl, combine coconut milk, oats, greek yogurt, chia seeds, shredded coconut, honey, vanilla and salt.
  2. In two, pint size mason jars (or a similar type of container) start by adding 1/3 cup of cubed mango to the bottom of each jar, followed by 1/2 cup of the oatmeal mixture. Add another layer of mango to each jar, followed by the oatmeal mixture. 
  3. Top each jar with the rest of the mango! 
  4. Put the lids on each jar and transfer into the refrigerator to let the oats and chia seeds soak overnight!

recipe notes:

  1. Optional: Add additional toppings to the top of your jars such as more yogurt, coconut whip, honey, puffed millet cereal, chia seeds, etc! 
  2. Want to make this recipe vegan? No problem! Substitute the greek yogurt for a non-dairy yogurt alternative and use pure maple syrup instead of honey!
