With the Fourth of July and summer BBQs in full swing, these red, white and blueberry oatmeal cookie cups are the perfect, last-minute friendly, option to bring along to your next gathering! 

These little guys make the perfect, fresh summer dessert and are made with simple ingredients that you can feel good about. Rolled oats, fresh banana, pure honey, coconut oil, vanilla essence, ground cinnamon and sea salt make up this one-bowl recipe’s base, but the toppings are where you can really get festive! I chose to highlight the traditional colors of America with greek yogurt, freshly-sliced strawberries and blueberries but these can easily be replaced with your favorite fruit choices! If you’re dairy-free, try substituting the greek yogurt here for coconut whip, a non-dairy yogurt option or vanilla ice cream! This recipe can also be made vegan by swapping the dairy for one of the above mentioned options as well as switching out the honey for pure maple syrup!

Besides being a festive summer treat, these fruit and oatmeal cups make a great healthy breakfast option for weekly meal preps and as an on-the-go snack!

THE RECIPE

Yields 12 oatmeal cookie cups

Prep time: 10 minutes // Bake time: 15 minutes

Total time: 25 minutes

 

ingredients:

For the cookie cups:

  • 2 Cups Rolled Oats
  • 1 Banana, mashed
  • 1/4 Cup Honey
  • 1/4 Cup Coconut Oil, melted
  • 1/2 tsp Pure Vanilla Extract
  • 1/2 tsp Ground Cinnamon
  • 1/4 tsp Salt

Toppings – Desired amounts of:

  • Greek Yogurt
  • Blueberries
  • Strawberries 

method:

  1. Preheat your oven to 350F/180C degrees and prepare a muffin tin by greasing with coconut oil or alternative non-stick.
  2. In a medium-sized bowl, mash banana with a fork until smooth.
  3. To the same bowl, add in all of the remaining ingredients and mix together until fully combined.
  4. Divide the mixture between each of the 12 muffin cups and press each one down until there is a clear indentation in the center.
  5. Bake in the oven for 15 minutes. The sides should be golden brown.
  6. Fill each cup with desired amounts of greek yogurt, blueberries and strawberries for a festive treat!

recipe notes:

  1. Greek yogurt can be subbed for alternatives such as cool whip, coconut whip, or non-dairy yogurt & ice cream options!
