Peanut Butter Granola

pEANUT BUTTER BANANA BREAD GRANOLA

If peanut butter and banana bread had a baby, this granola would be it! 

I’m a huge fan of granola because of it’s versatility! Granola can be soft-baked or crunchy, sweet & salty, a snack or a meal, the possibilities are endless! For this peanut butter banana bread granola I focused on combining some of my favorite ingredients like rolled oats, natural smooth peanut butter, fresh banana and an array of sweet spices for an unbeatable combination of flavor! 

Granola is my go-to food choice in so many situations. I absolutely love tossing it on top of a big smoothie bowl, as a snack on it’s own, as cereal with oat milk or combined with yogurt like in my Banana Bread Granola Parfait recipe!

I also LOVE how customizable granola recipes can be! All of your favorites can be tossed in to create the perfect blend of flavor and texture. Although I use peanut butter for this particular recipe (I am allergic to most other nuts) feel free to experiment with things like almond or cashew butter OR something like sunflower seed butter if you have allergy restrictions like me! The raisins in this recipe can also be substituted for things like chocolate chips, peanut butter chips, chopped walnuts or almonds. Don’t be afraid to get creative once you’ve mastered the art of making your own granola at home!

THE RECIPE

Yields roughly 5 cups of granola

prep time: 10 minutes // cook time: 30 minutes

total time: 45 minutes

ingredients:

  • 3 Cups Rolled Oats
  • 1/2 Cup Unsweetened Banana Chips, crushed
  • 1/2 Cup Unsweetened Raisins (optional, can be subbed with chopped nuts or dark chocolate chips)
  • 3 Tbsp Flax Seeds
  • 1 tsp Ground Cinnamon
  • 1/4 tsp Ground Nutmeg
  • 1/4 tsp Salt
  • 1 Large Ripe Banana, mashed
  • 1/3 Cup Natural Smooth Peanut Butter
  • 1/3 Cup Pure Maple Syrup
  • 1/4 Cup Coconut Oil, melted
  • 1 tsp Vanilla Extract

method:

  1. Preheat your oven to 350F/180C degrees and line a baking tray with parchment paper.
  2. To a medium-sized bowl, mix together the oats, banana chips, flax seeds, cinnamon, nutmeg and salt. (Raisins will be added after baking.)
  3. To a separate medium sized bowl, mash the banana with a fork until smooth. 
  4. To the same bowl, add in the peanut butter, maple syrup, coconut oil and vanilla extract. Whisk together until fully combined.
  5. Add the dry ingredients into the bowl that contains the wet ingredients. Mix thoroughly.
  6. On the lined baking tray, lightly spread granola mixture onto the pan evenly. Do not press down.
  7. Bake granola mixture for 25-30 minutes, flipping halfway through.
  8. Remove from the oven and let cool. Add in your raisins once completely cooled.

recipe notes:

  1. If using raisins in this recipe, make sure to add them to the granola mixture only after it has baked and cooled! The reason for this is so that you will not end up with rock hard/burnt raisins from being in the oven! If you choose to sub the raisins for dark chocolate chips, follow the same rule so that the chips won’t melt into the mixture. The exception to this is if you decide to sub the raisins for chopped nuts, these can be added into the mixture before baking!
