Chocolate Peanut Butter Protein Bars

I’m a huge fan of a quick grab-and-go kind of snack, especially when it comes to something that is made with wholesome ingredients and contains some protein and healthy fats to help keep me fuller for longer. There are so many protein bars out there on shelf that claim to be “healthy” and “all natural” and then you turn over the package and come to find that it’s loaded with tons of refined sugars, preservatives and processed junk! Yuck! 

This is exactly why I love creating my own homemade snacks so I know exactly what ingredients I will be consuming. These chocolate peanut butter protein bars are perfectly soft with a little bit of crunch and their flavor reminds me of a Reece’s peanut butter cup (my all time favorite candy as a kid!)

Try prepping these bars ahead of time for a simple snack you can have all week and feel good about eating! The prep time for these babies are only about 10 minutes and since they’re a no-bake snack option, it makes your clean up even easier!

To make these protein bars even more decadent than they already are, try topping them off with some crushed roasted peanuts, flaky sea salt and a generous drizzle of melted dark chocolate!

THE RECIPE

Yields roughly 12 protein bars

prep time: 10 minutes 

ingredients:

  • 3/4 Cup Natural Crunchy Peanut Butter⠀
  • 1 Cup Oat Flour⠀
  • 1/2 Cup Vegan Protein Powder of Choice (I suggest using vanilla, peanut butter or salted caramel protein flavor) ⠀
  • 1/3 Cup Pure Maple Syrup ⠀
  • 2 Tbsp Coconut Oil, melted
  • 1/2 Tsp Vanilla Extract⠀
  • 1/2 Cup Vegan Dark Chocolate Chips⠀

method:

  1. To a medium-sized bowl, mix together the peanut butter, maple syrup, coconut oil and vanilla extract until combined. ⠀

  2. To the same bowl, add in your oat flour and protein powder and combine until a thick dough is formed.

  3. Then, add your chocolate chips to the mixture and fold into the dough with a rubber spatula. ⠀

  4. Line an 8×8″ square baking pan with parchment paper. ⠀

  5. Place the dough into the pan and press down evenly until flat (about 1/2 inch thick.)

  6. Pop the pan into the freezer for 5-10 minutes to stiffen the dough a bit.

  7. Remove pan from the freezer and slice your bars! Feel free to eat them as is or top them with some melted chocolate, crushed peanuts & flaky sea salt like I did! Store these in the fridge for 1-2 weeks or in the freezer for 2-3 months!⠀
