Healthy Granola Parfait

SIMPLY SWEET
BANANA BREAD GRANOLA PARFAIT

Say hello to a quick and healthy breakfast that is perfect for prepping for the week! This banana bread granola parfait is gluten-free, refined-sugar-free and simply sweetened with natural honey and fresh banana. This breakfast recipe uses my homemade Peanut Butter Banana Bread Granola recipe from my blog, so if you haven’t made that yet, head on over to that recipe page and get baking! Alternatively, if you’re crunched for time, substitute my homemade granola recipe with another banana granola of choice.

Parfaits and yogurt bowls are a staple of mine when it comes to breakfast. By having a good unsweetened greek yogurt as the base, there’s an unlimited amount of flavor variations you could add to your bowl! Not to mention that greek yogurt adds a lot of protein to the meal, helping it to give you long lasting morning energy and keep you feeling satisfied for longer!

THE RECIPE

Yields 1 yogurt parfait

prep time: 10 minutes

ingredients:

method:

  1. Pour 1/2 cup of the granola mixture into a small glass or mason jar.
  2. For the second parfait layer, place fresh banana slices along the inside of the glass. Spoon 1 cup of yogurt over top of the banana slices. 
  3. Pour another 1/4 cup of granola over the top of the yogurt as the next layer.
  4. Add the last 1/2 cup of yogurt to the glass.
  5. Sprinkle the remaining 1/4 cup of the granola mixture over the yogurt.
  6. Finally, add the remaining banana slices to the top and drizzle with peanut butter and honey.
