Watermelon and Blueberry Salad

REFRESHING WATERMELON BLUEBERRY
FETA SALAD WITH MINT

Watermelon and blueberries, what could be better during a hot summer day?!

If you’ve never had a watermelon fruit salad with feta I could see how it might sound strange but TRUST me, the salty and sweet combo here is absolutely delicious! I’m a big fan of big fruit salad bowls throughout the summer so I just knew I had to recreate my own watermelon and feta salad with a twist.

This watermelon blueberry feta salad combines two of my favorite fruits with crumbled feta, thinly sliced red onion, freshly cut mint leaves, lime juice and just a bit of pure honey! The addition of blueberries here adds a great difference in texture and the lime juice & honey glaze creates the perfect balance of subtle sweetness with a refreshing tang!

THE RECIPE

Yields 4-6 servings 

prep time: 15 minutes

ingredients:

  • 5 Cups Fresh Watermelon, cubed
  • 1 Cup Fresh Blueberries
  • 1/3 Cup Crumbled Feta
  • 1/3 Cup Red Onion, thinly sliced
  • 1 Tablespoon Fresh Mint Leaves, shredded
  • 2 Tablespoons Lime Juice
  • 2 Tablespoons Pure Honey

method:

  1. In a large bowl, combine watermelon, blueberries, feta, red onion and mint. 
  2. In a separate, small bowl, whisk together the lime juice and honey.
  3. Pour the lime juice mixture over the watermelon salad and toss together until fully combined.

recipe notes:

  1. Served best cold! This salad is best served the first or second day after being made, but can be kept in the refrigerator for up to 5 days!
