mini spiced cinnamon apple waffles
Ah yes…fall is quickly approaching and we all know what that means.. bring on the apple and pumpkin spice recipes!
There’s just something cozy about the warming flavors that are associated with fall and this recipe is here to kick it off! I present to you the most mouth-watering stack of spiced cinnamon apple waffles!
These mini waffles are filled with the warming spices of fall such as cinnamon, nutmeg and allspice and are topped with sautéed apples, pure maple syrup and a peanut butter drizzle!
recommended equipment
I used my new, beloved mini waffle maker to whip these up and it was so fun and easy to do! There’s a ton of waffle maker options out there but this is the one I used!
THE RECIPE
Yields 5-6 mini waffles
prep time: 10 minutes // cook time: 15 minutes
TOTAL TIME: 25 MINUTES
ingredients:
For the Waffles
- 1 cup oat flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon sea salt
- 1/8 teaspoon ground allspice
- 1/2 cup oat milk (or other milk alternative)
- 1/4 cup apple (I used a Gala apple,) peeled and grated
- 1 egg
- 2 tablespoons pure maple syrup
- 1 teaspoon apple cider vinegar
- 1 teaspoon vanilla extract
For the sautéed apples:
- 1/2 tablespoon coconut oil
- 1/2 cup apple, chopped
- 1 tablespoon pure maple syrup
- 1/2 teaspoon ground cinnamon
method:
- Prepare your mini waffle maker (I use this one) by turning it on and heating it up.
- In a medium-sized bowl, whisk together the oat flour, baking powder, cinnamon, nutmeg, salt and allspice.
- In a separate small bowl, add the oat milk, grated apple, egg, maple syrup, apple cider vinegar and vanilla. Mix until fully combined.
- Pour the wet ingredients into the bowl with the dry ingredients and mix together until all ingredients are fully integrated.
- When your waffle maker is fully heated, spray a small amount of coconut oil (or alternative non-stick) onto the heated surface of the waffle maker.
- Scoop batter (roughly 1/4 cup) into the waffle maker and fully close the lid. Be careful not to overfill.
- Cook each waffle for 3-4 minutes or until golden brown.
- Carefully remove cooked waffles from the waffle maker using tongs.
To sauté the apples:
- In a small pan, heat up coconut oil over medium heat.
- Place chopped apple (I left the skin on for these,) maple syrup and cinnamon into the pan and toss together gently.
- Sauté the apples for roughly 5-7 minutes or until the apples have softened a bit.
recipe notes:
- Serve immediately with hot sautéed apples and toppings of choice such as maple syrup, peanut butter and more!
- Don’t have a waffle maker? Try making these as pancakes!
enjoy!
