This caprese cucumber salad takes just 10 minutes to throw together and makes the perfect simple lunch or side salad to any meal! Packed with fresh ingredients like crisp English cucumber, cherry tomatoes, mozzarella, avocado and fresh basil… how could you go wrong?
I love making big hearty salads that I can eat while sitting outside at home or pack up for an on-the-go lunch! This is especially true when it comes to anything “caprese” style…yum! Tomatoes & mozzarella are absolutely a match made in heaven in my opinion BUT there are plenty of vegan mozzarella options if you need this salad to be vegan or dairy free!
THE RECIPE
Yields 1 Serving
prep time: 10 minutes
ingredients:
1 Cup English Cucumber, chopped
1/2 Cup Grape Tomatoes, halved
1/2 Cup Small Mozzarella Balls, halved
1/2 Avocado (about 1/2 cup,) chopped
1 Tablespoon Red Onion, diced
1 Tablespoon Fresh Basil, chopped
1/2 Tablespoon Red Wine Vinegar
1/2 Tablespoon Balsamic Vinegar
1/4 teaspoon Dried Oregano
Salt and Pepper to taste
method:
In a small salad bowl, add cucumber, tomatoes, mozzarella, avocado, red onion and fresh basil. Toss until ingredients are incorporated and evenly distributed.
In a second small bowl, whisk together the red wine vinegar, balsamic vinegar, dried oregano and a pinch of sea salt and black pepper to taste.
Pour the dressing mixture over the salad and toss together until the dressing evenly coats all of the ingredients.

Best served immediately but can be prepped 1 day in advance and stored in the refrigerator in an air-tight container!
