WARM & COZY CARAMELIZED BANANA PORRIDGE

As summer turns to fall, I always find myself beginning to shift from craving cold, overnight oats to warm stovetop porridge!

There’s nothing quite like a big bowl of oatmeal to start the day. It’s wholesome, full of fiber that helps to keep you fuller for longer and provides tons of energy to get your day started. The best part? There’s about a million ways to customize a bowl of oats with unique flavors, mix-ins and toppings!

This caramelized banana porridge is one of my favorites! I’ve been making caramelized bananas for years, even as a little sweet treat on their own! They’re super simple to make, take less than 10 minutes and are the perfect topping for oatmeal!

Besides the caramelized banana on top, I like to mash the other half of my banana and mix it straight into the porridge for extra banana flavor! I also love adding chia seeds into the mix with the oats; this gives an extra fluffy texture to the porridge while also providing some protein, fiber & omega-3 fatty acids!

THE RECIPE

Yields 1 SERVING

TOTAL TIME: 10 MINUTES

ingredients:

For the Porridge

  • 1 cup unsweetened oat milk, (or plant-based milk of choice)
  • 1/2 cup gluten free quick-cooking oats
  • 1/2 ripe banana, mashed
  • 2 tablespoons chia seeds
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Pinch of nutmeg
  • Pinch of salt

Optional Toppings:

  • Pumpkin seeds (pepitas)
  • Hemp seeds
  • Peanut Butter
  • Honey
  • Oat milk
  • Cinnamon

For the Caramelized Bananas

  • 1/2 ripe banana, sliced lengthwise
  • 1/2 teaspoon coconut sugar
  • 1 teaspoon coconut oil
  • Pinch of cinnamon

method:

  1. In a small pot, mix milk and oats together and place over medium heat.
  2. While the oats are warming, add mashed banana, chia seeds, pure maple syrup, vanilla, cinnamon, nutmeg and salt to the pot. Mix until all ingredients are combined.
  3. Once the oats begin to bubble (after around 5-7 minutes,) remove from heat and transfer into a serving bowl. (Exact cooking times may vary depending on your package of oats.)
  4. Add caramelized banana on top and other desired toppings!

To Caramelize the Banana

  1. In a small pan, heat up coconut oil over medium heat.
  2. Place sliced banana face down on the pan and sprinkle with half of the coconut sugar and a dash of cinnamon.
  3. Flip the banana after about 3 minutes (or when the bottom side is golden) and sprinkle the reverse side with the remaining coconut sugar and another dash of cinnamon.
  4. Continue to pan fry for another few minutes until both sides are golden.
