CHICKPEA CHOCOLATE CHIP COOKIES

“Ummm… did you just say chickpeas??” Yes, yes I did!

Okay, hear me out! If you haven’t tried making baked goods with chickpeas, you’re missing out! Chickpeas are extremely versatile and have such a neutral flavor that they can be made to taste sweet or savory depending on the other ingredients in the recipe! I’ve had tons of success with making cookies, brownies, edible raw cookie dough bites and more with this powerhouse ingredient. Not to mention, has anyone seen chocolate dessert hummus they’ve been selling in stores…YUM! 

These chickpea chocolate chip cookies are the perfect healthier version to a classic sweet treat! The chickpeas here add an unbelievably soft & fluffy texture to the cookies and also provide some extra plant-based protein to your dessert. Woo-hoo!

In addition to our star-of-the-show ingredient, this recipe incorporates some of my other go-to favorites such as natural peanut butter, oat flour, tahini and pure maple syrup.

THE RECIPE

Yields roughly 20 cookies

prep time: 10 minutes // rest time: 20 minutes

cook time: 15 minutes // total time: 45 minutes

ingredients:

  • 1 (15 oz) Can of Chickpeas, drained and rinsed
  • 1/2 Cup Smooth Natural Peanut Butter⠀
  • 1/3 Cup Pure Maple Syrup⠀
  • 1/3 Cup Oat Flour ⠀
  • 3 Tbsp Tahini ⠀
  • 3 Tbsp Coconut Sugar ⠀
  • 2 Tbsp Coconut Oil, melted
  • 2 tsp Vanilla Extract⠀⠀
  • 1 tsp Raw Apple Cider Vinegar 
  • 1/2 tsp Salt ⠀
  • 1/4 tsp Baking Powder ⠀
  • 1/4 tsp Baking Soda ⠀
  • 1/2 Cup Dark Vegan Chocolate Chips ⠀

method:

  1. Preheat oven to 350F/180C degrees and prepare a baking sheet by lining with parchment paper.⠀
  2. Drain and rinse chickpeas thoroughly. 
  3. Place all ingredients (except the chocolate chips) into a food processor or high-speed blender and blend until fully combined. 
  4. Transfer the mixture into a bowl and place into the fridge for 20 minutes. 
  5. Remove mixture from the fridge and fold in the chocolate chips with a rubber spatula or wooden spoon.
  6. Place tablespoon-sized amounts of dough on a baking tray, 2 inches apart, and press down gently on each cookie to flatten slightly, dough will be very soft. 
  7. Bake for 15-18 minutes or until edges are slightly browned.
