Okay coffee lovers…this one’s for you! Need a little caffeine boost and something to eat while you’re on the run? I’ve got you covered with this mocha chip banana bread! Get your coffee fix & quick breakfast all at the same time!
This is not your ordinary banana loaf; this is a rich, chocolatey and delightfully sweet bread that is made from whole ingredients like oat flour, organic cacao, dark roast coffee and is sweetened with fresh banana and pure maple syrup!
I absolutely love making a good banana bread on a Sunday or Monday and having it last all week long (if my boyfriend doesn’t eat it all!) Especially when I’m busy throughout the week and might not feel like making a full meal, having a quick and healthy snack to reach for is just the pick-me-up I need!

THE RECIPE
yields 1 loaf of banana bread
prep time: 15 minutes // Cook time: 85 minutes
total time: 1 hour 40 minutes
ingredients:
1 1/4 Cups Oat Flour
1/3 Cup Cacao Powder
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Sea Salt
3 Medium Bananas, very ripe, mashed
1 Egg
3/4 Cup Pure Maple Syrup
1 1/2 tsp Pure Vanilla Extract
2 Tbsp Instant Coffee, dissolved in 2 Tbsp of hot water
1/4 Cup Coconut Oil, melted
1/4 Cup Unsweetened Greek Yogurt, room temperature
1/2 Cup Dark Chocolate Chips
method:
- Preheat your oven to 180C/350F degrees. Grease a 9″x5″ bread loaf pan with coconut oil or alternative non-stick spray.
- In a large bowl, mash bananas with a fork until smooth.
- To the same bowl, add in the egg, maple syrup, vanilla, dissolved instant coffee, coconut oil and greek yogurt. Whisk together thoroughly.
- To a separate, medium sized bowl, mix together the oat flour, cacao powder, baking powder, baking soda and salt.
- Add the dry ingredients into the wet ingredients and mix until batter is fully combined.
- Fold in the chocolate chips, leaving some for the top of the loaf.
- Pour batter into the loaf pan and top with the remaining chocolate chips. At this time, you can also choose to add sliced banana to the top if you would like!
- Bake the banana bread for 75-85 minutes or until you can stick a toothpick into the middle and it comes out clean.
