With summer weather pretty much lasting all year round here in Hawaii, I’m constantly trying to find ways to mix up my smoothies, smoothie bowls & refreshing summer treats. Not only is this kiwi açaí smoothie bowl loaded with all of the antioxidants and beneficial nutrients that açaí has to offer, but I also tossed in some of my other fresh favorites from my local farmer’s market!
What’s in the bowl you ask? Besides the obvious answer of “açaí,” I threw in some frozen mango chunks (my favorite,) banana, kiwi, frozen cauliflower and just a dash of coconut milk for blending. The kiwi in this recipe gives the whole bowl a unique, subtle tartness that works perfectly with the sweeter fruits in the blend. I’m a huge fan of a thick and creamy (almost ice cream-like) consistency for my smoothie bowls! For this reason, I try to add as little liquid as possible so that the blend won’t become too thin.
When in doubt: throw veggies in! Some people give me an odd sideways glance when they see me toss things like frozen cauliflower and zucchini into my smoothie bowls but, in my opinion, they are a must! Not only do the veggies add some extra nutrients and fiber to the meal, but they make a huge difference in creating that perfect thick consistency that we want!
THE RECIPE
makes 1 smoothie bowl
ingredients:
1 Unsweetened Frozen Acai Sachet
1 Frozen Banana
1/3 Cup Frozen Cauliflower Rice
1/2 Cup Frozen Mango Chunks
1/2 Small Kiwi
1/4 Cup Coconut Milk
method:
Add all ingredients into a food processor or high speed blender and blend together until fully combined.
Easy peasy!

For this kiwi acai smoothie bowl I added toppings such as kiwi, banana, hemp seeds and coconut flakes. Feel free to get creative and add things like peanut butter, granola, chia seeds or whatever your favorite smoothie bowl toppings are!
