That satisfying feeling of dipping your spoon into the sweet raw cookie dough, knowing the package warns against this, only to get bloated and uncomfortable with stomach pain for the rest of the night…ugh!
Well, my friends, here is your solution! These vegan cookie dough bites are completely safe to eat raw and are dairy-free, gluten-free, sweetened by pure maple syrup and made with wholesome ingredients that your body will feel good about!
So go ahead… stick your spoon in the bowl!
THE RECIPE
Yields roughly 30 cookie dough bites (1 inch in size)
prep time: 10 minutes
ingredients:
1/2 Cup Smooth Natural Peanut Butter
1/4 Cup Pure Maple Syrup
3 Tbsp Oat Milk (Or other plant based milk)
2 Tbsp Melted Coconut Oil
1 Cup Oat Flour
1/4 Cup Ground Flax Meal
3 Tbsp Coconut Flour
1 Tsp Maca Powder
Pinch of Salt (about 1/8 Tsp)
1/4 Cup Vegan Dark Chocolate Chips
method:
In a medium sized bowl, add peanut butter, maple syrup, oat milk and coconut oil and whisk together thoroughly.
To the same bowl, add oat flour, ground flax meal, coconut flour, maca powder and salt. Mix together until a thick dough is formed.
Fold in your chocolate chips.
Roll tablespoon amounts of dough in between your hands to form small cookie dough balls or feel free to dig right in with a spoon! Store in the fridge or the freezer.
